Procedure for preparing vanilla rolls

Make a smooth and firm dough from all the ingredients. To the short dough rolls long processing is definitely not good. When cold butter is added to the dough according to the recipe, just quickly combine it with other ingredients with your fingers into a compact mass and do not rot any further. Make a roll out of the dough, wrap it in cling film and let it rest in the cold for at least two hours, but preferably up to the next day.

Before processing, leave the dough for a while at room temperature, it will be easier to work with him. But be careful, it must not be too warm, it would not be possible to shape anything at all. Then roll out a larger roll from part of the dough and cut it into rounds. Thanks to this, all the rolls will be the same size. Then roll out the pieces into rolls and bend them into the shape of rolls.

Baking time is in the oven heated to 180 degrees for about 10–15 minutes. (It is better to keep a close eye on them and adjust the baking time according to your experience with your oven.) Baked rolls are essentially pale on top, only slightly pinkish. Once you hold one in your hand and it holds together, it’s baked. Take the baking sheet out of the oven before the edges start to turn golden, they will still run out after taking it out of the oven.

After baking the rolls, let them cool for a while and then, while they are still warm, cover them in icing sugar with vanilla.
Tip for beginners: Doughs with a smaller proportion of butter and added yolk are not so sticky and are easier to work with. Likewise, it is better to start with almonds, they are easier to work with. Here is our favorite recipe for beginners.
Tips for a better taste of vanilla rolls
- Prepare a few days in advance homemade vanilla sugar: put a vanilla pod in the jar with sugar, which will gradually release the aroma, or mix the sugar and the pod.
- Sieve the ingredients. The flour aerates nicely (it’s not a superstition), you get rid of small lumps with powdered sugar, and if you sift even ground nutsa forgotten shell will not get into the dough. After all, it is already recommended by the queen of traditional baking, MJ Sandtnerová.
- If you have a cookie machine at home, you can make your work easier and make rolls with its help. Thanks to this, they will be even more fragile and fluffy and will have a uniform form.
Tip for allergy sufferers: The basic recipe for rolls is without eggs. You can also try making rolls without butter or nuts. Butter can be replaced with vegetable fat, but you will replace nuts incorrectly – if there is no other way, it is better to omit them completely or try fried flakes.
